But I’ll be goddamned, the majority have drunk beautifully. This bottle has definitely reached that pinoté stage and probably will resonate most with those when enjoy mature Beaujolais. The cherry and spice of its youth has crossed over from baking to baked spice and so dried cherries have found their way into the tasting cherries but there’a still freshness that belies the solar vintage. And as the tannins are mostly resolved with the acidity softening enough to announce the maturity of the wine, the texture has gotten lacier and even a bit filagreed given the warm of the year. Fine stuff and shining with a Berkshire pork chop, roasted sweet potato, and pan-roasted asparagus (non local but charred enough to evaporate the irrigation water). Now, I purchased 18 bottles of this back in the day, which may have been a bit much but 15 bottles in, I’ve been mostly rewarded.
