Pattes Loup, Chablis, Vent d'Ange 2016

Found a 2016 at a local wine shop and was very excited to try this. I've heard great things about Domaine Pattes Loup / Thomas Pico from those whose opinion I trust, and this did not disappoint. I brought this to a sushi restaurant and upon popping, pouring, the first sip was very impactful; particularly how it really hit your saliva glands and induced quite a bit of salivation from its acidity (and in a very good way). The chef who tasted some much later in the meal equated it to really good sushi vinegar which I thought was a fun comparison. Given that the bottle is entering its 5th year of aging, some secondary and tertiary characteristics already started blooming. The overall mouthfeel, aroma, balance, and surprising ease / drinkability was astounding. The nose had nuanced lemon, and there were profiles of other people's premier cru Chablis in it, including notes of starfruit, maybe a bit of grapefruit, pineapple, ripe pear in a very interesting way. A delightful match with a majority of the sushi I had, which from a pairing perspective easily surpassed the ultra smooth Dauvissat Forest 2015. (4/2021)
