The Dominode, as is often the case in the Pavelot cellars, is the top wine in the range in 2006, and is extremely promising. The beautiful bouquet jumps from the glass in a blaze of candied cherries, black raspberries, espresso, a bit of Echézeaux-like bonfire, great minerality and a touch of vanillin oak. On the palate the wine is medium-full, deep and intensely flavored, with a great minerally personality, an excellent core of fruit, and lovely cut and grip on the ripely tannic finish. This is a complete and compelling example of young Savigny. 12/2007

This is such a changeling, first day is still quite firm and tannic with bitter dark fruits, much like other Pavelots i've had, however, after letting this 1/2 bottle rest overnight I found such a different wine, the tannins had subsided, fruit stood out, still dark but the bitterness disappeared altogether, very nice balance and a fun drink. Just got to like a dark berry, not big wine to make this work for you. 1/31/2025
