Interestingly, the 1979 Mayacamas cabernet is not a whole lot more developed than the 1984 or 1985, and clearly needs at least a few more years of cellaring to fully blossom and soften. However, a bit more patience will certainly be rewarded, as this wine offers up an excellent bouquet of cassis, dark berries, bell pepper, singed tobacco, a bit of La Mission-like chipotle pepper and other Graves-like tones of cigar ash and earth. On the palate the wine is full-bodied, deep and soil-driven, with excellent acids and focus, a fine core of sweet, black cherry fruit, and great length and grip on the modestly tannic, full and substantial finish. There can be very few 1979 cabernets from California that are still this good, and still in need of a bit more cellaring as well! Fine juice. (Drink between 2010-2035) (1/2008)
