Aromas of ash, black pepper, rock salt, black olive, wet stone, potpourri and fresh tobacco lead to outrageously expressive, savory flavors on the palate. Outstanding—
This has all of the savory notes you get from Cayuse (at least those I’ve had)—olive brine, grilled meat, campfire ashes, fresh, wet earth, iron—but with slightly more elegance and restraint. The nose showed hints of red and black berries, fresh thyme and rosemary. The palate was just as elegant and dynamic—soft tannins, silken texture, and a pleasantly lingering aftertaste.
What I’ve occasionally disliked about Cayuse is the strength of the medicinal aftertaste. To be sure, it’s here too, but better integrated. Over 5 days, the palate never faded—more olive brine, fresh raspberry, blackberry, and blueberry.
While I think this is ready to drink, I also think this has plenty of time. 4/7/2023
