Herve Souhaut (Domaine Romaneaux Destezet), Ardeche, Syrah 2019
Hervé Souhaut Syrah is a natural wine from Domaine Romaneaux-Destezet in Arlebosc, Northern Ardèche. Made from 100% Syrah grapes from 30-to-80-year-old vines planted on granite soils, the wine undergoes whole-cluster fermentation with semi-carbonic maceration at low temperatures. Hand-harvested grapes are fermented in wooden tanks with indigenous yeasts for extended maceration, then aged on fine lees in neutral oak casks for eight months. Bottled unfiltered and unfined with minimal sulfites at 25mg/L and 13% alcohol.
Tasting notes
Deep purple color with violet reflections. The nose offers violets, bacon fat, black cherry, smoky meat, and kalamata olives. The palate shows juicy plum, black cherry, candied violets, strawberry, and cured meat notes. Velvety texture with balanced acidity, supple tannins, and persistent spicy finish.
