During the 1980s, Eric Bordelet was one of the most influential figures in the Parisian wine scene, as he spent several years at the helm of the wine program at the illustrious Michelin Three-Star restaurant l’Arpège. Native of Normandy, he went back in 1992 and took over the family business of cider production, encouraged by his close friend, Didier Dagueneau of Pouilly-Fumé. Along the way, he has become one of the greatest cider producers in the world.

This triptych introduces you to Bordelet's Elite Selection of heirloom varietals that truly deliver transcendent ciders that will rearrange your entire understanding of the 'hard cider' category.

6% abv, Off dry, deluxe sparkling apple cider
This is Bordelet’s special cuvée for apples. Named after what the elders called the large and small rock formations which dominate the area, this is a truly “Grand Cru” cider. The apples are crushed and left to macerate on their skins for 3-5 days for some serious extraction of flavor. The apples used are 40% sweet, 40% bitter, and 20% acidic (sour), and the finished cider contains approximately 3% residual sugar. Off dry, but with good acidity and some tannins from the skins, it is best after aging in the bottle for 1 year.
4% abv, Off-Dry, Deluxe Sparkling Pear Sidre
    300 Year Old Trees
This Is Bordelet’s “Grand Cru” Pear Cider. The Fruit Source For This Is A Stand Of 60 Foot Tall, 300 Year Old Pear Trees. This Is A Cider Which Can Stand Tall With Fine Champagne Wines. It Is Only Lightly Filtered In Order To Preserve The Texture And Flavor Of These Minuscule Pears. Very Complex In Both The Nose And Mouth, This Is A Truly Unique Product. Perfect In Less Formal Settings With Any Food, It Will Also Add Some Real Class To A Fine Dinner Or Any Situation Where Fine Champagne Is Called For.
      🍎 | Bordelet, Cormé Sydre
      8% abv, Off-Dry,
Cormé (crabapple) is Bordelet’s highly limited production Sidre.
Considered by many to be finest sidre available
Produced from 8 different varieties of the small crabapple-like cormier tree fruit (Sorbus Domestica), sometimes called “Service” or “Sorb” tree. In the Rosaceae family (rose, apple, pear, quince, etc.), this tree can be found wild throughout western Europe but in the Mayenne region of France in particular. Cormé was produced and consumed in large quantities by working class folk at least since the 15th century and was fairly common until the 1950s when industrial apple and pear cider became the drink of choice.
Eric Bordelet has truly upped his game with this unique cider. The nose is fresh, floral and somewhat honeyed with delicate notes of pear and apple, but so much more. We are definitely in the realm of fine wine here with true finesse and grace in the aromatics and balance of this unique beverage. Crisp, full and persistent on the palate with a subtle mineral vein and wonderfully complex.
