Barrel Aged, Barrel Fermented, Dry Farmed, Hand harvested, Indigenous yeast fermented, Méthode Champenoise

Extra Brut French craft cider created in Beaune, Burgundy from the blend of dozens of apples varietals hailing from Burgundy, Normandy, Brittany and Pays d’Othe.
Fermented (indigenous yeasts) and aged several months in a wide range of white and red wine barrels : Aligoté, Chardonnay, Pinot Noir, Cabernet Sauvignon.
Natural second fermentation in bottle (Champagne method)
Méthode champenoise is achieved using no cane or other processed sugar. Ciders are aged in still form for a full year in barrel. During the following harvest, unfermented apple juice is added to raise sugar levels, which then ferments in bottle to create the fine bead of carbonation.

In the beginning…4 friends and a project
We are Véronique, Patrick, Jean-Arnaud and Jean-David, four friends from different backgrounds but with a shared appreciation of well-crafted beverages and many years of working with winemakers, distillers and brewers in France and abroad.
In 2020, we started crafting ciders in a tiny cellar in the center of Beaune. In 2021 we moved to a slightly larger winery !
Fermentation, ageing, blending and tasting have always been our passion. These are also the focus of our new venture: designing and crafting distinctive ciders in Beaune, born from the blend of local apples and juices from other French regions, fermented and aged like grands vins in a surprising and joyful collection of wine and spirits barrels.
Our mission: reviving and putting a new spin on the cider-making tradition in Burgundy.
Of fruits, juices, terroirs and people…
Eclectik is a unique cidery by design. In addition to the apples we collect from wild orchards in Beaune or our surroundings, we select and buy apple juices from cidermakers or farmers in several French regions with a rich cider-making tradition like Pays d’Othe, Normandy, Brittany, Perche or Jura,. Freshly-pressed juices are transferred to Beaune to ferment in our cellars with native apple yeasts.
This eclectik and singular approach provides us with an extensive selection of superb juices from dozens of apple varieties, with different flavours, from different terroirs. It’s like having a wide and wonderful palette of colours to paint from.

  • PRE-ARRIVAL offers are products that we source from either our large network of North American private collections or our partnerships with European suppliers or Domaines.
  • ESTIMATED TIME of ARRIVAL: Unless otherwise stated in the individual product page our Pre-Arrivals are estimated to land in Los Angeles within 30-50 days or so from upload date. Inquire for specific dates for the item you are interested in.
  • BOTTLE CONDITIONS: as these are pre-arrivals our final label and ullage descriptions are not yet included. If you have concerns inquire and we will do our best to get answers.
  • PRICES: published prices are commensurate with bottles in good condition for their kind and age. Most will be in "excellent" to "pristine" based on how we select wines to represent in our store.
  • Custodial chain for our Pre-Arrival wines are temperature controlled professional logistics carriers, licensed or bonded warehouses.
