From Domaine de Trevallon comes one of the greatest and most unique wines of France. A blend of cabernet sauvignon and syrah, this wine balances unbridled richness with power and length. The red wine is a blend of 60% cabernet sauvignon and 40% syrah harvested and vinified separately. Fermentation takes place in small-sized stainless steel vats and in wood, which is used to carry out the "pigeage" or punching the cap with feet. Vatting lasts 2 to 3 weeks without temperature control and without yeasting. The wine is then aged for two years in small oak barrels.

Dinner at La Boheme with the Crew (Palo Alto): Powerful, unique combination of Syrah & Cabernet Sauvignon. Super clean bottle, long and e sharing. Excellent. Showing the complexity of age but not at all ‘aged’ notes. 4/18/2023

Dinner with the wine group (La Bohème, Palo Alto): Medium ruby, age-appropriate bricking; aromatic, aged Bordeaux character, red bell pepper, earthy, slight spice; palate is medium bodied, medium alcohol, medium-plus acidity, excellent mature red fruit, complex, great balance; finish is medium-plus length. Very nice, seems Cabernet dominant and competitive with a great Bordeaux at this age. 1-2 hours air: fabulous, continuing to improve with lovely red fruit and vibrancy, excellent complexity. 4/18/2023
