This beer is brewed with Lyon barley, a variety developed by renowned artisan grain breeder Kevin Murphy of the WSU Bread Lab and named in honor of his mentor and colleague, Steven R. Lyon. We sourced a beautiful crop from Bill Myers’ family farm overlooking the Palouse River in Washington State. Brewed as a Pilsner-style lager, Lyon presents a cheerful straw-yellow hue with luminous white foam. Aromas of wildflowers, Meyer lemon, and sweet alfalfa are fragrant and expressive. An inviting, open palate leads into a refreshing, long finish marked by flinty minerality.

Most beers are defined by their hops; Hanabi is defined by its grain. By sourcing rare, heirloom, and ancient grains from small family farms, Hanabi creates lagers that drink like fine wine—complex, elegant, and deeply connected to the land.
