This one-time-only bottling of 100% Colson Canyon Syrah aged 27 months in 100% new French oak was inspired by a trip Joey and our assistant winemaker, Zac Wasserman, made to France. While there they met some French winemakers who were experimenting with new techniques to keep wines clean, fresh and free of volatile acidity as they aged for an extended period of time. These barrels were tipped at a 45 degree angle and not opened at all for six months. When barrels are tilted, the rubber bung that closes the top of the barrel is submerged, sealing out any oxygen at all and eliminating the need to top off the barrel on a regular basis.
